Soup's on!

It's a great day for soup. My all time favorite soup is Olive Gardens' Minestrone. My friend found a recipe that is a close second.

Copycat Olive Garden Minestrone Soup by Todd Wilbur

SERVES 8
Ingredients:

* 3 tablespoons olive oil
* 1 cup minced white onion (about 1 small onion)
* 1/2 cup chopped zucchini
* 1/2 cup frozen cut italian green beans
* 1/4 cup minced celery (about 1/2 stalk)
* 4 teaspoons minced garlic (about 4 cloves)
* 4 cups vegetable broth (Swanson is good *note: Do not use chicken broth!*)
* 2 (15 ounce) cans red kidney beans, drained
* 2 (15 ounce) cans small white beans or great northern beans, drained
* 1 (14 ounce) can diced tomatoes
* 1/2 cup carrot, julienned or shredded
* 2 tablespoons minced fresh parsley
* 1 1/2 teaspoons dried oregano
* 1 1/2 teaspoons salt
* 1/2 teaspoon ground black pepper
* 1/2 teaspoon dried basil
* 1/4 teaspoon dried thyme
* 3 cups hot water
* 4 cups fresh baby spinach
* 1/2 cup small shell pasta

Directions

1.Heat three tablespoons of olive oil over medium heat in a large soup pot.
2.Saute onion, celery, garlic, green beans, and zucchini in the oil for 5 minutes or until onions begin to turn translucent.
3.Add vegetable broth to pot, plus drained tomatoes, beans, carrot, hot water, and spices.
4.Bring soup to a boil, then reduce heat and allow to simmer for 20 minutes.
5.Add spinach leaves and pasta and cook for an additional 20 minutes or until desired consistency.
6. Makes about eight 1 1/2 cup servings.


This is the last day my in-laws are here and it has decided to snow,and I'm sure the kids are going to request a redneck sled ride.

And Joseph also went up from Galilee out of the city of Nazareth into Judea, unto the City of David which is called Bethlehem (because he was of the house and lineage of David)

And there were in the same country shepherds abiding in the field, keeping watch over their flock by night.
And lo, the angel of the Lord came upon them, and the glory of the Lord shone round about them, and they were sore afraid.
And the angel said unto them, "Fear not, for behold, I bring you good tidings of great joy, which shall be to all people.
For unto you is born this day in the City of David a Savior, who is Christ the Lord.
And this shall be a sign unto you: Ye shall find the Babe wrapped in swaddling clothes, lying in a manger."
And suddenly there was with the angel a multitude of the heavenly host praising God and saying,
"Glory to God in the highest, and on earth peace, good will toward men!"
And it came to pass, when the angels were gone away from them into heaven, the shepherds said one to another, "Let us now go even unto Bethlehem and see this thing which has come to pass, which the Lord hath made known unto us."
And they came with haste and found Mary and Joseph, and the Babe lying in a manger.
And when they had seen it, they made known abroad the saying which was told them concerning this Child.
And all those who heard it wondered at those things which were told them by the shepherds.
But Mary kept all these things and pondered them in her heart.
And the shepherds returned, glorifying and praising God for all the things that they had heard and seen, as it was told unto them.
And when eight days were accomplished for the circumcising of the Child, His name was called JESUS, who was so named by the angel before He was conceived in the womb.
And when the days of her purification according to the Law of Moses were accomplished, they brought Him to Jerusalem to present Him to the Lord

Love it!




I have always had a frugal mind, but not always acting on it. I found this great blog about living simply. Gardening, preserving, making do or do without(as my friend Tara says). It's a great read and very inspirational. If you are looking toward living simply go check it out! My ultimate goal would be debt free, but my husband isn't quite there yet. I think I'll try her soft approach*U*.

It's Cold Out There!!

Here in Eastern WA we are having a cold snap. The nights are negative temps and the days are in the low teens, except for today. We've been keeping the kids indoors for the most part. They did get out before it got really cold and got to sled and build snow forts. We have snow in the forcast for at least a week, I hope both sets of parents don't freeze when they come to visit!

The poor animals are having to endure this cold snap, we've added blankets, warm molasses water and a heat lamp. I hope they make it!

Giving Thanks-Wednesday

Giving Thanks

This is about the easiest side dish you will ever make! And your crew will love it! I can't take credit for it though it came from my SIL's MIL.

CORN CASSEROLE
1-can shoepeg corn(found next to mexicali corn in can veggie isle)
1-8oz cream cheese(lite or reg)
1-can diced green chilies
Put in crock pot a couple of hours before serving to bubbling, stirring often.
It can be doubled or tripled very easily. I usually triple it for Thanksgiving for a group of 15-20. Also makes a great potluck dish.

Variations:
Warm in a casserole dish and top with bread crumbs, for a crunchy topping.

I have a busy day today. A field trip to a T.V. station and Bible study in the evening so my time is limited today.

Project
I am going to try and finish the shrinky dink place cards today. I got 2 families done yesterday, hopefully get the last one done. I am also going to look for something to cover our gigantic plywood table my hubby makes for this holiday.

Cleaning Before and After Pictures

This week I'll be working on cleaning my kitchen for the big day. Today I am focusing my attention on the fridge and the surrounding cupboards. I will be posting the after pictures at the end of the cleaning.

I cleaned the fridge inside and on top, and hung this homemade curtain in front of the open cabinet next to the fridge.

Piece of tidbit for you

On the way home from Bible study tonight, Jocelyn asked if the stars look bigger when you are in outer space? Well I didn't know the exact answer so I looked it up and this is what I found.

What do the stars look like from space? Are they bigger?
The stars don't look bigger, but they do look brighter. When you're on Earth, if you go to the top of a mountain, the stars look much brighter than they do at sea level. And because the space shuttle is above Earth's atmosphere, it's like being on a very, very high mountain. So they look brighter, but not bigger.

So there you go, in case any 6 year old asks that question you now have an answer:)

Journal Covers

Last year we covered the kids composition books with scrapbook paper, but they didn't turn out so well. This year we tried again and they turned out much better!
I got the idea from Kelli .
Grab your supplies: paper for front and back, stickers, and letters for the name.

Wrap books front and back,tape them, decorate and add name and year.

The kids had a great time decorating their books, Jordan is my girlie girl so she picked flowers. Jocelyn picked spaghetti because she was hungry and Bday balloons because her Bday was coming up. Jacob picked a water scene and Sponge Bob. I personally think he picked sponge Bob to annoy me but it was his book so I put on my best smile:)

We also did the same with their nature journals.
